Try This Kale Recipe

Today I made this kale dish, Bitter Greens with Sweet Onions and Tart Cheese,  from this week’s newsletter and I think you should try it, too.  It is delicious!  It’s surprisingly sweet from the slow-cooked vidalia onions, and the slightly-warm feta cheese makes it different from other kale-and-onion dishes I’ve made.  My recipe variation was the addition of cannellini beans, which worked very well.  I used my whole kale share in this, so I now have lots of leftovers for the next couple of days.  🙂

I wasn’t surprised to see that this recipe is from one of Mollie Katzen’s cookbooks, because I’m a huge fan of the Moosewood Restaurant cookbook series (Mollie Katzen was one of the founders of The Moosewood Restaurant in Ithaca, New York).
