Since the last of my frozen veggies include a lot of diced and pureed zucchini, I figure it’s time keep a steady supply of Zucchini Brownies in our house. So, upon searching through my recipe folder, I found this old farm newsletter with the perfect way to use up my bags of frozen zucchini.
These cake-like Zucchini Brownies are moist and delicious, and best of all, very very easy to make. They are similar in taste to the Chocolate Zucchini Muffins I posted about last year. The good-for-you stuff in these brownies are the cocoa powder, walnuts, and of course zucchini, which helps when I can’t seem to stop myself from having “just one more.” 😉
